Homemade for the Holidays: Save Money Without Sacrificing Style

Chocolate Praline Toffee Crisps
Yields 48 crisps
12 whole graham crackers
1 cup packed brown sugar
1 cup butter (do not substitute margarine)
1 tsp double-strength vanilla
2 1/2 cups coarsely chopped pecans
1/4 cup semi-sweet chocolate morsels
1/4 cup white chocolate morsels
1. Preheat oven to 350 degrees Fahrenheit. Arrange crackers side by side in single layer in a large bar pan. Combine brown sugar, butter and vanilla in a 3-quart saucepan. Bring to a boil over medium heat, stirring occasionally. Boil sugar mixture 4 minutes, stirring constantly.
Be sure to boil the sugar mixture for the full 4 minutes before adding pecans. If using a candy thermometer, the temperature of the mixture should reach 244 degrees Fahrenheit when the topping is cooked.
2. Remove from heat, and stir in pecans. Immediately pour sugar mixture over crackers and spread evenly. Bake 10-14 minutes or until sugar mixture is bubbly and the pecans are lightly toasted. Remove the pan from oven to cooling rack; cool completely.
3. In prep bowl, microwave semi-sweet chocolate morsels on high 30-60 seconds or until smooth, stirring after each 20-second interval. Place resealable plastic bag into a cup. Pour chocolate into the bag, and trim corner to allow chocolate to flow through; drizzle over crisps. Repeat with white chocolate morsels. Let stand until chocolate is firm.
4. Cut into 24 squares; cut squares diagonally in half to form triangles. Once the chocolate is firm, store the crisps between layers of parchment paper in an airtight container in a cool place.
